The 25th of March is both a national and religious holiday, celebrated by Greeks all around the world. Clean Monday, known as Kathara Deftera in Greek, is an important religious and cultural holiday in Greece, marking the beginning of Lent in the Eastern Orthodox Church. It falls 48 days before Easter Sunday and symbolizes spiritual and physical cleansing. Traditionally, people celebrate by enjoying meat-free, dairy-free meals, often including olives, legumes, vegetables, seafood, and lagana, a special unleavened bread. It’s also a day for outdoor activities, like picnics and kite flying, as families and communities gather to welcome the Lenten season with joy and reflection.

Surely it reminds us of chocolate mousse, which brings back childhood memories and is nevertheless a classic, signature flavor of simplicity.
